Pozole History and Information

Pozole or Posole is a Robust, medium spicy soup made with pork or chicken, hominy, onions and spices. A Mexican stew similar to Menudo, Pozole is a prehispanic stew or soup from Mexico that was originally served on Christmas Eve but now is a favorite meal that can be served on a cold day, after church or at any time of the year.

Pozole comes from the nahuatl word Potzolli which means foamy, and it is a typical dish made from nixtamalized cacahuazintle corn, with meat, usually chicken, pork rinds, pork, turkey, chili peppers, seasonings and garnish. The Ingredients of Pozole changed after the colonization by the Spaniards, but the fundamental ingredient; corn, remained.

Pozole was made to be consumed on special occasions, since corn was considered a sacred plant for the Aztecs as well as other Mesoamerica inhabitants. The combination of meat and corn for the Aztecs was important because they had the belief humans where made out of cornmeal dough by the gods. On these special occasions when pozole was consumed the meat used in the pozole was human. After tearing the heart out of their prisoners in a ritual sacrifice, Aztecs would chop the rest of the body and cook it with corn. Then as an act of religious communion, the pozole was eaten by the whole community. After the Spanish conquest and cannibalism was prohibited, pork became the predominant meat as it tasted very similar to human meat. Pozole today is a typical dish in various states like as Jalisco, Mexico, Morelos, Michoacan, Guerrero, Distrito Federal and Sinaloa.
