The name comes from the contraction of Subincancab (Subin K'áankab)which is the town where we grow the pepper and sauce is made. It means "land of red soil withthorny bushes." Thus the name is taken Subin (thorny) and ik (iik, pepper in Maya) andHispanicized, "thorny pepper". Was taken from ancient Mayan recipe, fresh habanero pepper, mashed in a mortar, previously sauteed adding the secret ingredients of the house.
