Easy Tortilla Manicotti Recipe
8 Soft Taco Size Flour Tortillas2 cups cooked and diced Chicken (may be prepared earlier to save time)1 can (4 oz.) chopped Chiles (reduce for milder version)1 large Tomato seeded and diced1 cup low fat Ricotta Cheese4 Green Onions, chopped2 Tbsp. minced Cilantro1 cup Mexican Salsa1 cup shredded low fat Mozzarella Cheese1 cup shredded low fat Cheddar Cheese
1. In a bowl, combine chicken, Chiles, tomato, ricotta, green onions, cilantro. Salt & pepper to taste. Place tortillas on a flat surface and spread the filling equally down the center of each. Roll up tortillas tightly and place, seam side down, in a lightly greased 13x9-inch baking dish. Spoon salsa over tortillas and sprinkle cheese. Cover with foil and bake at 325 degrees F for 20 minutes. Remove foil and cook 5 to 10 minutes.
