Pizza Primavera Vegetariana a la Parrilla

4 Taco Size Flour Tortillas1/2 medium Red Onion thinly sliced1 medium Yellow Bell Pepper thinly sliced3 large Plum Tomatoes seeded and thinly sliced1 tsp. Red Jalapenos seeded and minced (optional)1 small bunch Spinach stems removed, thinly sliced3 Tbsp. low calorie Italian Dressing1 1/2 cups reduced-fat Gouda Cheese shredded


1. Preheat oven to 500 degrees F. Toss all ingredients (except tortillas and gouda cheese) in a large bowl and marinate for 10 minutes.

2. Warm tortillas in an un-oiled skillet until crisp. Stir one cup of cheese into vegetable filling. Divide cheese mixture among 4 tortillas.

3. Sprinkle tops with additional 1/2 cup of cheese. Place tortillas on sheet pan and bake for 10 minutes or until cheese melts.

4. Cut tortillas into 4 wedges and serve.
