Black Bean Tortilla Pie with Flour Tortillas Mexican Recipe

Nonstick cooking spray1 (15-oz) can Black Beans1/2 cup lowfat 2% Milk2 Egg Whites1 cup Onion chopped1 cup Green Bell Pepper chopped1/2 cup Vegetable Broth2 cloves Garlic minced8 oz. Green Chiles chopped and drained4 cups Tortilla Chips coarsely chopped1 cup Cheddar Cheese shredded


1. Preheat oven to 375F. Spray 2 quart casserole with nonstick spray. In blender, mix beans, milk and egg whites until smooth. Set aside. Cook onion, bell pepper, stock, garlic, chilies in 10 inch skillet over medium heat for 5 minutes, stirring occasionally, until onion is tender. Place 1 cup of chopped chips in bottom of casserole. Spread vegetable mixture over chips. Sprinkle with 1/2 cup of cheese. Bake for 30-35 minutes until hot and cheese is golden-brown. Serve with chili sauce if desired.

It's in the oven, but the directions are not complete for anyone starting to make this. It doesn't tell you when to add the bean mixture that you had put in the blender and it doesn't mention when to put the other 3 cups of chips in - or in what order so I just layered and put cheese on top. We're going to eat in just a few minutes - standby - OK, done with dinner - we liked it very much! I did make some homemade guac. to put on top, but it had a good flavor.
