Shrimp Fiesta Fajitas Mexican Recipe
4 Soft Taco Size Flour Tortillas2 Tbsps. Lime Juice2 Tbsps. Soy Sauce2 Tbsps. Fresh Ginger minced2 Tbsps. Garlic minced1/4 tsp. Tabasco Sauce1/8 tsp. Black Pepper1 lb. Medium Shrimp peeled and deveined2 Tbsps. Vegetable Oil1/2 Red, yellow or green Bell Pepper thinly sliced1 small Onion thinly sliced2 small Tomatoes seeded and chopped
1. Blend first seven ingredients together, except tortillas. Then add shrimp. Cover and place in refrigerator for 1-2 hours.
2. To serve: Heat 2 tablespoons oil in skillet. Saute peppers and onion until soft. Add shrimp and tomatoes, saute just until shrimp turns pick. Don't overcook or shrimp will become tough. Serve with warm tortillas.
