La Mexicana Tortilla Press is crafted from high-quality cast iron ("hierro fundido") for superior durability and even pressing. This sturdy, traditional kitchen tool allows you to easily make fresh, homemade tortillas with authentic taste and texture, producing perfectly round 6.5" tortillas every time.



How to make masa and tortillas from corn tortilla flour and how to use the tortilla press and comal:

3 cups of Maseca Tortilla flour or masa harina
1/2 teaspoon salt
1 1/2 to 2 cups lukewarm water

Mix ingredients in a bowl with a fork. Gather into a ball, and knead dough until smooth and no longer sticky. Cover with a towel and allow to stand for 1 hour.

HOW TO USE A TORTILLA PRESS

To make tortillas, start by lining the base of the tortilla press with a sheet of plastic wrap. Take small balls of dough from the masa and place them in the center of the lined press base. Cover the masa with another sheet of plastic wrap. Close the press by lowering the top and pushing down the handle. Open the press to reveal the tortilla, which will have plastic wrap on the bottom. Carefully peel off the top plastic wrap. Place your hand under the tortilla, then flip it onto your other hand so the plastic wrap is now on top. Gently remove the remaining plastic wrap. Transfer the tortilla to a preheated, very hot griddle or comal. Cook until the edges start to dry, then flip it over. Continue cooking until the top begins to puff, about 1 1/2 to 2 minutes. Lightly tap the tortilla with your fingertips to encourage even puffing. Remove the tortilla, wrap it in a napkin or clean towel, and enjoy!

Use a Tortilla Press to make Tamales

Tip from Debbie McDade: We discovered how useful a tortilla press is for spreading the Masa in making Tamales. We make the dough then press a ball of it between 2 pieces of wax paper (which can be used many times). Then we remove 1 piece of the paper and lay it on the corn husks. Remove the other piece of paper and fill, roll, and cook. You wouldn't believe how much easier it is to make tamales!

LAS TORTILLAS

Para hacer una tortilla se toma la masa necesaria, se hace una bolita que se coloca en el centro de la prensa manual, encima de un pedazo de plástico transparente de 20 x 20 cm. (fig. 1), se le pone encima otro pedazo de plástico igual, se cierra la tapa de la prensa y se presiona: naturalmente, cuanto mayor sea la presión ejercida, más delgada quedará la tortilla.
Se abre la prensa y se quita el plástico superior empezando por una esquina del lado del mango. Se desprende el otro pedazo de plástico junto con la tortilla y con cuidado se voltea ésta sobre los dedos de la mano abierta, desprendiendo el plástico. La tortilla se extiende sobre el comal caliente; cuando empieza a inflarse se aplana un poco con la mano. Se voltea la tortilla tres o cuatro veces hasta que se dore en algunos puntos en ambos lados, y se coloca en una canasta especial (chiquihuite o tlaxcal), en el cual las tortillas apiladas se envuelven en una servilleta gruesa.

TORTILLAS DE HARINA DE MAIZ

Se puede usar harina de maíz nixtamalizado (MASECA), la cual se amasa con 1 1/4 litros de agua tibia por cada kilo de harina y se deja reposar. De 1 kilo de maíz se obtienen 1.500 gramos de nixtamal y 1.600 gramos de masa, que dan aproximadamente 50 tortillas de 14 cm. de diámetro. De 1 kilo de harina de maíz nixtamalizado se obtienen 2.250 gramos de masa y aproximadamente 75 tortillas.
Las tortillas recién hechas son más sabrosas, pero se pueden recalentar; en este caso, es conveniente pasarles la mano húmeda encima una vez que estén en el comal. Recién hecha, la tortilla presenta por una cara una fina, o sea una piel delgada que, para la elaboración de algunos platillos, se desprende en el momento de sacarla del comal.
Las tortillas del día anterior sirven para infinidad de platillos y antojitos y en este libro se dan varias recetas de ellos (chilaquiles, enchiladas, totopos, etc.) Y una tortilla del día anterior, simplemente tostada sobre el comal o la plancha, dorada y crujiente, se le denomina "tostada" y es el complemento perfecto de un buen guacamole o de unos frijoles refritos.

This is a good solid tortilla press, does a great job and is easy to use. Also not expensive. The finish isn't fancy, but I didn't buy it to look at. I got it to make tortillas and it does that great.

  • Not finely finished. If you want a fancy press to enhance your decor or impress your friends, this isn't the one you want.

I like it. It's surprisingly heavy. Does the job and my tortillas come out uniform all the time. Be sure to use either 2 sheets of parchment paper or 2 quart size storage bags when you press the corn dough so it doesn't stick to the press. Easy to wipe clean and store away for the next day's use.

I'm from LA and I miss fresh tortillias. Corn tortillias are always stale here, and flour tortillias are too salty. So I thought I'd try my hand at making them myself. And it's so easy to do with this tortillia press. I really love it. It's fun, and the tortillias are delicious!

The tortilla press is pretty heavy and is a little hard to clean since the edges are not smooth. Its always a good idea to press the tortillas between two pieces of parchment paper. This makes the cleaning easier. For the price, its a pretty good tortilla press.

The tortillas are a bit thicker than store bought -- this made the hard shells I made a little too hard, but other than that its a nice press for the price. The Cast Iron handle feels like it might snap one day, but even if it does, its so heavy it would work until i got a replacement. Would have rated 5 star if it was steel ( 3 star if aluminum -- aluminum bends under pressure, get the cast iron) but I have not seen any steel presses. I would buy this press again knowing what I know now.
