Whole Annato or Achiote Seeds by El Guapo

Achiote or Whole Annatto seeds by El Guapo, are the the slightly musky-flavored seeds from the achiote tree, which are used as a food coloring (red) in the Yucantan peninsula dishes like Cochinita Pibil: a savory dish made by using achiote to color it, marinating the pork in strong acidic citrus juice, and roasting the pork while it’s wrapped in banana leafs and Recado Rojo, which is made with various spices and is the key flavor in carne asada, fajitas, and is usually rubbed on pork meat, fish, and poultry, as well as vegetables. When rubbing the meat with “Recado Rojo” the meats get wrapped in banana leafs along fresh chiles, and are pit-roasted until the meat falls off the bone.

The Ancient Aztecs called it “Achiotl,” and it was used for Mexican manuscript painting in the sixteenth century. I love to throw whole achiote seeds into covered baking-ware with fresh whole chicken, an assortment of vegetables and spices and let everything cook at 370 degrees for about an hour. The achiote softens and contributes flavor to the preparation and biting the whole seed is pleasantly nutty tasting and soft.
