Creamy Guacamole Mexican Recipe

8 Fajita Size Flour Tortillas1 1/2 cups Avocados peeled and cubed1 cup fat free Ricotta Cheese1/3 cup Onion coarsely chopped2 Tbsp. fresh Cilantro coarsely chopped2 Tbsp. fresh Lime Juice1 Tbsp. seeded Jalapeņo Pepper coarsely chopped1/2 tsp. Salt


1. Preheat oven to 350 degrees F. Cut each tortilla into 8 wedges. Place tortilla wedges on a baking sheet; bake at 350 degrees F for 10 minutes or until crisp. Set aside.

2. Place avocado, cheese, onion, cilantro, lime juice, jalapeņo and salt in a food processor; process until smooth. Serve with toasted tortilla wedges.
