Disolve the Achiote La Perla del Mayab with lemon juice and water. Pour mixture over pork and marinate for 3 hours or overnight. If using banana leaves, cut into pieces to fit a roasting pan. Remove center ribs from leaves and use for tying. Lay a couple of strings (long enough to tie around pork) in bottom of roasting pan. Place leaves on top of strings, place pork and marinade on top of leaves. Fold banana leaves over pork and tie with strings. Cover pan and bake in oven at 325 for 1 1/2 hours. Serve with rice, warm corn tortillas, black beans and red onions in vinegar (encurtidas).
