
This is the very best barra de achiote that you can buy. BUT you don't need to use anywhere near as much as they usually suggest. For Yucatecan style pollo asado - 2 -4 leg quarters, I usually use about 1/5 to 1/6 barra for the marinade, which is comprised of about 1/3-1/2 c lime juice, 3-4 T olive oil, several grated garlic cloves, oregano, & comino.
