Dired Chile Tepin Whole Chili Pods - Chiltepin 1/4 oz
Chile Tepin by El Guapo is one of the hottest and smallest chili peppers. Common names for Chile Tepin include chiltepin, chiltepe, and chiletepin. The Chile Tepin peppers are also nicknamed "bird's eye" peppers, rank high in heat level. Chile enthusiasts argue that Chile Tepin is hotter than the Red Savina habanero or Habanero pepper. Arrebatado (rapid or violent) is what the heat of the Chile Tepin is called in Mexico because, while the heat is intense, it does not last very long. Chile Tepin is similar to Chile Piquin, they are both very popular and eaten either fresh or dried. The hottest part of Chile tepin are the seeds and ribs. By removing some or all of the seeds or ribs will reduce the heat of the chili. Chile Tepin peppers are used as hot pepper seasoning stews, sauces, bean dishes and soups in Hispanic, Indian and Asian Foods. You'll find Chile Tepin is available dried, fresh and in powder form. Chile Tepin will last for up to a week if stored unwrapped in the refrigerator. Avoid storing Chile Tepin in plastic because they will retain moisture and cause them to rot.

Dried Venison Sausage
By Frank A. Mann from South Texas on January 28, 2013
My sons and I have over the years fine tuned a recipe for dried venison sausage. This recipe includes 3/4 oz tepin chilis to 60 pounds of pork and venison. These were a lifesaver as our local bushes didn't produce enough for 120 pounds of sausage. Mex Grocer to the rescue. Made sausage last week. It is drying in the smokehaus. The tepin chilis were identical to the ones in South Texas and held that same unique flavor. Thanx again!
