Turkey Veggie Melt

Recipe Ingredients:

4 Mission® Fat Free Fajita Size Flour Tortillas
1/2 cup fat free Cheddar Cheese shredded
4 tsp. low calorie Mayonnaise
6 oz. low fat cooked Turkey sliced
1 medium Green Bell Pepper thinly sliced into rings
1 small Red Onion thinly sliced into rings
1/2 large Cucumber thinly sliced
2 medium Tomatoes sliced

Recipe Instructions:

1. Preheat oven to 400 degrees F. Spray both sides of tortillas lightly with cooking spray and place side by side on a sheet pan. Bake until lightly golden and crisp, about 12 minutes.
2. Spread 1 teaspoon mayonnaise on each tortilla.
3. Place turkey, bell peppers, red onion, cucumber and tomato on top of tortillas. Sprinkle each with cheese and broil for 3 to 5 minutes or until cheese is melted.
