1. Preheat oven to 400 degrees F. Spray both sides of tortillas lightly with cooking spray and place side by side on a sheet pan. Bake until lightly golden and crisp, about 12 minutes. 2. Spread 1 teaspoon mayonnaise on each tortilla. 3. Place turkey, bell peppers, red onion, cucumber and tomato on top of tortillas. Sprinkle each with cheese and broil for 3 to 5 minutes or until cheese is melted.
