Ingredients

12 oz can of Whole Tomatillos17 oz can Diced Green Chiles1 Medium onion, quartered2-3 Garlic cloves, peeled2 cups sour creamSalt and pepper to taste12 Corn Tortillas1/2 cup Corn oil2 lbs Shredded Chicken or Boneless chicken breasts, cooked and cubed4 cups Swiss, Jack Cheese or Oaxaca cheese, grated1 bunch Green onions, chopped

Directions

In food processor, blend together tomatillos (tomate verde or husk tomatoes), green chiles, onion, garlic and sour cream. Season to taste with salt and pepper and pour into a large saucepan. Heat thoroughly.Heat oil in skillet until a drop of water sizzles when placed in it. Fry a tortilla lightly on both sides so it's still pliable. Using tongs, remove it from the pan. Dip it into the enchilada sauce and lay it inside a 9X14 pan. Stuff enchilada with chicken, cheese and onions. Roll and place seam side down in the pan. Repeat for all 12 tortillas, reserving a small amount of cheese and onions.

This is how I first had chicken enchiladas with green sauce, at my favorite local Mexican restaurant, "El Azteco" in Lansing MI. Made with swiss cheese. Not that there's anything wrong with other kinds of cheese, but thanks for sharing this unique way of making the dish! Yum! Not a diet food but impressive for a special meal!

The video was helpful and I especially like it comes from a Mexican kitchen. I have not made the enchiladas yet. I know there are many ways to make enchiladas. What you left out of the recipe was the cilantro and the tomatoes used are tomatillos the ones with the husk. Its the green sauce you purchase in cans.

  • Is the fact that not all the ingredients are specific and which ones to use exactly. I am American of Mexican descent and know better, but some people who are not might think the tomatoes are the regular ones.

I printed out this recipe and started to make it...it looks like it was missing some information...I've never made a Sour Cream Sauce..so I had to look in another recipe...it didn't say what to do with all the extra Sour Cream Sauce - so I assumed it was supposed to be poured on the top - but then again I had way too much salsa sauce and had to store it...didn't know if it was to be baked or not - covered or not...??? But guess I'll bake it until the cheese melts? Guess I'll learn by trail and error ! Maybe I need to buy the book to get the rest of the recipe ?

I think that sauce is definitely the best part of this recipe. It was just delicious and a great compliment to this dish. I work with Better Recipes so I am always reviewing recipes and Mexican Recipes are by far my favorite. My family loved this so much I am sure I will be making it again soon.
