The video was helpful and I especially like it comes from a Mexican kitchen. I have not made the enchiladas yet. I know there are many ways to make enchiladas. What you left out of the recipe was the cilantro and the tomatoes used are tomatillos the ones with the husk. Its the green sauce you purchase in cans. 
I made the recipe with the whole tomatoes, recipe was not easy to follow, so I figured it out along the way. It was good, but would like to try the green version
The recipe calls for whole canned tomatoes, which would produce a red sauce. The pictured Enchiladas definitely shows a green sauce as in the following video I watched. I would love to have the recipe I saw in the video using tomatilos and jalapenos. I am a cook and have worked in Mexican restaurants. The sauce part of the recipe makes no sense. Like I said. I'd rather have the recipe for the sauce I saw in the video. Thanks. I didn't want to give it any stars. But you have to.
I printed out this recipe and started to make it...it looks like it was missing some information...I've never made a Sour Cream Sauce..so I had to look in another recipe...it didn't say what to do with all the extra Sour Cream Sauce - so I assumed it was supposed to be poured on the top - but then again I had way too much salsa sauce and had to store it...didn't know if it was to be baked or not - covered or not...??? But guess I'll bake it until the cheese melts? Guess I'll learn by trail and error ! Maybe I need to buy the book to get the rest of the recipe ?
I think that sauce is definitely the best part of this recipe. It was just delicious and a great compliment to this dish. I work with Better Recipes so I am always reviewing recipes and Mexican Recipes are by far my favorite. My family loved this so much I am sure I will be making it again soon.
