4 Mission® Light or Fat Free Flour Tortillas 1 tsp. Olive Oil 1 clove Garlic minced 1/4 cup chopped fresh Basil 1/2 cup Tomato Sauce 4 large Plum Tomatoes diced 1 1/2 Tbsp. Basil chopped 1 cup Mushrooms sliced 10 frozen Baby Artichokes halved 3 sundried Tomatoes packed in water and julienned sliced 1 cup nonfat Mozzarella Cheese grated 4 Tbsp. Parmesan Cheese Olive Oil Cooking Spray
1. Heat the olive oil in a nonstick sauce pan and saute the garlic for 2 minutes. Add the tomato sauce and tomatoes and simmer over low heat 5 minutes. Season to taste. Stir in the basil and immediately remove from heat; keep warm, or reheat briefly before serving. 2. Spray a nonstick skillet with olive oil cooking spray and saute the mushrooms over High heat just until golden. Stir in the artichokes and sundried tomatoes and continue cooking for another minute. Set aside. 3. Prick tortillas with a fork and spray both sides of the tortillas with cooking spray, place onto sheet pans and bake in a preheated 400 degree F oven for 10 minutes, or until crisp. 4. To assemble, spread each tortilla with tomato sauce and top with sauteed vegetables, grated cheeses and whole basil leaves. Return to oven for 5 minutes, or until cheese melts.
