  • 1 cup diced cucumber

Instructions

  1. Cook the shrimp.
    Bring a pot of salted water to a boil. Add the shrimp and cook for about 2–3 minutes, just until pink and opaque. Transfer immediately to an ice bath to stop the cooking. Drain well and chop larger shrimp into bite-size pieces.
  2. Make the chipotle cocktail sauce.
    In a blender, combine the ketchup, Clamato, Camarónazo Seafood Sauce, chipotle peppers, adobo sauce, lime juice, La Guacamaya Hot Sauce, Worcestershire sauce, and Tajín. Blend until smooth.
  3. Mix the cocktail.
    In a large bowl, combine the shrimp, red onion, cucumber, tomato, and cilantro. Pour the chipotle cocktail sauce over the shrimp and mix well.
  4. Chill.
    Cover and refrigerate for at least 30 minutes so the flavors can come together.
  5. Serve.
    Spoon into cocktail glasses or bowls. Top with diced avocado, an extra sprinkle of Tajín, a few drops of hot sauce, and a lime wedge. Serve with saltine crackers, tostadas, or tortilla chips.
