Chicken Tacos with corn tortilla Mexican recipe
1. In a 2-quart microwave-safe baking dish, cook chicken, uncovered, on HIGH 2 to 3 minutes until no longer pink. Mix together taco seasonings and water, add to chicken and blend well.
2. Continue cooking 2 minutes longer. In a separate microwave-safe baking dish, heat refried beans, covered, on HIGH 4 minutes, stirring once.
3. Wrap tortillas in damp paper towel, microwave on HIGH for 30 seconds or just until softened. To serve, spread warmed tortillas with 2 tablespoons each: refried beans, 5 to 6 strips chicken with sauce mixture, and sprinkle each tortilla with 2 teaspoons each: tomatoes, avocados and onions.
4. Finish with 1 tablespoon cheese on each tortilla. Roll tortilla into cone shape and tie with one green onion top or fold in half to serve.
