MOLE POBLANO
El mole poblano (originario de la ciudad de Puebla) o salsa mole es el platillo nacional de México y se reserva para ocasiones especiales. Es un plato que requiere una larga preparación y diversas habilidades culinarias. El mole fue perfeccionado por las monjas de la Orden de Santa Rosa en la ciudad de Puebla, en el centro de México, para impresionar a los políticos y clérigos que visitaban la región en el siglo XVII. Algunos consideran que la pasta de mole fue la primera salsa para barbacoa debido a su uso y a los distintos tipos de alimentos con los que se aplica.
