El chile pasilla molido , que se pronuncia [pah-SEE-yah], significa "pasita" en español debido a su parecido con una pasa. Son chiles ahumados, largos, delgados y oscuros, bastante picantes. El polvo seco y molido se obtiene de estos chiles originarios de Guanajuato, Jalisco y Zacatecas. El pasilla es la versión seca del chile chilaca, largo y estrecho. Tiene un sabor terroso y se usa en salsas como el mole; a menudo se combina con frutas y es excelente con mariscos, guisos, cordero, hinojo, miel, champiñones, pato, ajo u orégano. Para liberar todo su sabor, hierva estos chiles secos en agua durante unos 10 minutos o hasta que estén blandos. Una forma de preparar este tipo de chile es rellenarlo con queso y freírlo (chile relleno). Los chiles pasilla también se conocen como chile pasilla, pasilla negro y chile negro.
