Chile guajillo seco de Tampico
El chile guajillo, que se pronuncia [gua-ji-yo], es un chile rojo anaranjado brillante, grueso y de textura correosa, con un picor de suave a moderado. Es el chile más cultivado en México y se vende entero y seco. Su sabor recuerda al té verde con notas de frutos rojos y un toque dulce y picante. Tiene forma alargada y se estrecha hasta terminar en punta, a veces ligeramente curvada. Debido a su piel dura, los chiles guajillo requieren un remojo más prolongado que otros chiles antes de su consumo. Se pueden moler o hidratar para obtener una pasta ligera o una salsa roja aromática. Se utilizan comúnmente para preparar salsa para tamales, salsas, pastas, mantequillas, salsas picantes, adobos para todo tipo de carnes, como pollo, y también para sopas y guisos.
Consejos: Antes de tostar los chiles guajillo, límpialos con un paño húmedo para quitarles la tierra o el polvo. Antes de remojarlos y licuarlos, sácalos de la bolsa, quítales las semillas, los tallos y la mayor cantidad posible de venas. Luego, córtalos en rodajas y colócalos en un tazón. Puedes conservar los guajillos hasta por seis meses o más, guardándolos en un recipiente hermético en un lugar fresco y seco. También puedes sustituirlos por chiles de Nuevo México, cascabeles o chiles de California.
