Pinole Cookies Recipe

Ingredients:

  • 2 cups La India Verdena Pinole
  • 2 cups whole wheat flour
  • 2 cups sugar
  • 1/2 lb butter
  • 1 tsp baking powder
  • 1 egg
  • 1/2 tsp cinnamon
  • 1 pinch of salt

Preparation:

Mix the butter until smooth. Add the sugar, egg, cinnamon, flour, baking powder, and pinole. Knead until all ingredients are well combined. Shape the dough using a cookie cutter and place on a baking sheet. Bake for 25–30 minutes at 392°F until golden.
