Few party foods disappear faster than a platter of nachos and a great Mexican layered dip. They are colorful, easy to share, simple to customize and packed with the flavors people naturally gather around: crispy tortilla chips, refried beans, salsa, guacamole, cheese, jalapeños and hot sauce.
That combination makes nachos especially good for football weekends, tailgates, watch parties, family get-togethers and an El Grito celebration.
You do not need a major event as an excuse, either. Sometimes a bag of tortilla chips, a bowl of salsa and a few flavorful toppings are exactly what you want when you are looking for an easy snack with more personality than the usual chips and dip.

Nachos Started in Mexico
The story of nachos begins not in a football stadium or movie theater, but in Piedras Negras, Coahuila, Mexico, directly across the border from Eagle Pass, Texas.
In 1943, Ignacio Anaya, whose nickname was “Nacho,” was working at the Victory Club when a group of women connected to the nearby U.S. military community arrived looking for something to eat.
With the regular kitchen staff unavailable, Anaya improvised. He took pieces of corn tortilla, fried them until crisp, added cheese and sliced jalapeño peppers, heated everything together and served his quickly assembled snack to the group.
The original idea was remarkably simple: corn tortillas, cheese and jalapeños.
Anaya's creation became known as Nacho's Especiales, eventually shortened simply to nachos.
From the Mexico-Texas border region, nachos spread through Texas and the American Southwest. Restaurants added their own variations, and beans, meat, salsa, guacamole, crema, tomatoes, onions and different chiles gradually transformed a simple snack into the fully loaded platters we recognize today.
How Nachos Became Stadium Food
The next major transformation came decades later. By the 1970s, nachos were already well established, but serving freshly melted cheese quickly to thousands of sports fans presented a different challenge.
Frank Liberto helped solve that problem with a concession-friendly nacho cheese system that could be heated and dispensed quickly. Stadium nachos gained enormous exposure during the 1970s, helping cement the connection between nachos and sporting events.
The original Piedras Negras creation and the modern stadium version are very different foods, but they share the same basic idea: make something satisfying, flavorful, uncomplicated and easy to enjoy with other people.

Mexican Seven-Layer Party Dip
This is our party-platter interpretation of the classic layered Mexican dip. Refried beans create the foundation, followed by sour cream, chunky salsa, guacamole, cheese, fresh vegetables and olives. Serve it with plenty of tortilla chips and let everyone dig in.

Ingredients
- 1 can refried beans, about 15–16 oz
- 2½ cups guacamole
- 1½ cups sour cream
- 1 cup Herdez Chunky Salsa
- 1 cup shredded cheddar cheese
- ½ cup chopped tomatoes
- ½ cup sliced scallions or green onions
- 1 can sliced black olives, about 4½ oz
- 1 bag Santitas Tortilla Chips
- Optional: sliced jalapeños, hot sauce, cilantro and extra salsa
How to Assemble the Dip
- On a 14-inch platter, spread refried beans evenly almost to the edge.
- Add the next layers while leaving a small border of each layer visible.
- Layer in this order: sour cream, salsa, guacamole, shredded cheese, chopped tomatoes, green onions and sliced olives.
- Keep covered and chilled until ready to serve.
- Serve with tortilla chips, extra salsa, hot sauce and optional grilled carne asada or pollo asado add-ons.
Why This Works So Well for a Party
The secret is not complicated preparation. It is contrast.
You get the richness of refried beans, the cool creaminess of sour cream and guacamole, the brightness of salsa and tomatoes, the bite of green onions, the saltiness of cheese and olives, and finally the crunch of a tortilla chip underneath everything.

Build Your Nacho Bar
For a larger football party or El Grito celebration, use the layered dip as the centerpiece and turn the rest of the table into a nacho bar.

One easy way to turn your snack table into a meal is to grill meat and let guests add it to their own nachos.

If you are feeding a larger crowd, make two dip platters instead of one oversized platter. Put one out and keep the second chilled until you need it.

Nachos work before kickoff because everyone can snack while talking and getting settled.
They work during the game because nobody needs a knife and fork.
And they might be even better after the game when everyone suddenly realizes they are hungry again.

More than eight decades after Ignacio “Nacho” Anaya put together his famous combination of tortillas, cheese and jalapeños in Piedras Negras, nachos continue to evolve.
They can be as simple as the original idea or piled high with beans, salsa, guacamole, grilled meat, fresh toppings and plenty of chile.
