It begins with a basic history of the tamale and instructions for their stuffing, wrapping and cooking. It then offers a huge variety of recipes for what you may have previously thought a one-dimensional dish. There are a dozen recipes for tamale dough alone, and the fillings range from the savory vegetarian, meat and seafood versions to sweet and fruit-filled desserts. The photos are fit for framing, depicting dishes like the "Carmelized Onion Tamales with Tomato-Basil Salad" and "Carnitas Tamales with Pineapple and Tomato-Habanero Sauce". Finish off a meal with "Sweet Pumpkin Tamales with Nutmeg Creme Anglaise".

Beautifully written, amazing recipes

The intro to the book really draws you and makes you appreciate the tradition behind tamales - so much more than good food. I enjoyed learning about the deep rooted traditions and personal stories.

As far as the cookbook portion, it will never be considered a basic tamale cookbook. While the recipes are very complex - the result is amazing flavors, colors and aromas. In my opinion it's worth the time and effort to follow the lengthy ingredient list and cooking instructions.

  • There are no basic instructions, every recipe is built on layers and layers of flavor
  • There is a lot of flipping back and forth, as each recipe refers to many other recipes or techniques to complete (I think it's worth it, but for a casual cook it would be too much)

It has a lot of nice recipes, mostly very fancy which I did want but I had also hoped for some simple recipes which were not included.

This is a nice cookbook, however less traditional than I had hoped. The recipes are good and it contains useful discussion about tamale making and ingredients.
