Once fully aged and developed, Los Altos Queso Cotija is then covered with a special coating of spices and chili which give it a distinctively red and spicy coating. This cheese is salty and sharp with undertones of pepper, clove and chipotle. Very tasty cookies. As a diabetic, three cookies protect my stomach before medicines. These cookies not only taste excellent, but are very low in sugar content. They even provide protein! I highly enjoy these. The only downfall is the cost per box.
