For the guacamole:4 large ripened avocadosSalt to taste1 cup minced onion4 chiles Serrano, minced1/2 cup finely chopped cilantroFor the garnish1/2 tomato diced1/4 cup minced white onion4 to 6 sprigs cilantro, with leaves and a bit of stem
1. Peel and pit avocados. Mash pulp in a bowl or molcajete, and add salt to taste.
2. Add onion, chiles and cilantro.
3. Continue mashing until guacamole is thick and lumpy.
4. Garnish with tomato, onion and cilantro. Serve with corn tortillas or totopos.serve immediately .
