El Molcajete es un utensilio de cocina original, esencial y práctico que se utilizó por primera vez hace 3500 años durante la era prehispánica para hacer salsas, y muy poco ha cambiado desde entonces. El Molcajete es un mortero tallado en piedra volcánica con forma cóncava, como un tazón con tres patas, en el que se muelen chiles, especias y hierbas para hacer salsas y guacamole. La palabra Molcajete deriva del náhuatl Molli (Salsa) y Caxitl (Tazón (Cajete)) y puede ser de piedra porosa (mejor) o de barro vidriado. La piedra porosa en forma de pera que viene con el Molcajete, el mortero que se usa para moler los alimentos se llama texolotl o Tejolote del náhuatl Tetl (Piedra) y xocotl (moler o pulverizar); también conocido como temolote o telmalchin.
El molcajete o mortero se sigue utilizando en la elaboración de alimentos en los estados del centro y sur de México. Las especias se trituran en el molcajete como ningún otro, y la mayoría de las veces se utilizan para preparar salsas debido a su textura y sabor especiales. Las salsas o el guacamole se pueden servir o presentar en la mesa después de ser elaborados en el mismo mortero, dándole a la mesa un aspecto rústico. Por lo general, las recetas no se guisan ni se cocinan en el molcajete, ya que se mantiene caliente durante mucho tiempo, así que no se sorprenda si encuentra su comida hirviendo media hora después de servirla. Los molcajetes son excelentes decoraciones en su cocina, dándole un auténtico toque mexicano y también son un excelente regalo para los amantes de la salsa en su lista.

Otra forma de ablandar el molcajete, ya que pueden desprenderse pequeños granos de piedra de la superficie al usarlo por primera vez, es moler arroz en el molcajete, un puñado a la vez. Cuando el arroz triturado ya no tenga granos de piedra negros visibles, el molcajete estará listo para usar. No se preocupe si queda harina de arroz molida en la superficie del molcajete; no habrá problema.
