THE MEXICAN MOLCAJETE

The word molcajete (mortar) derives from Nahuatl, the language of the Aztecs: ìmolliî (seasoning or sauce) and ìcaxitlî (bowl). The word tejolote (pestle) also derives from Nahuatl: ìtetlî (stone) and ìxolotlî (doll)."Foods traditionally prepared in the molcajete include salsas and mole's (mohl-LAY), as well as guacamole. It is also used for grinding chilies, garlic or other herbs and spices for food preparation.

Quick Guide: How to Cure Your Molcajete

  1. Wash thoroughly with soap and water.

  2. Grind garlic into a paste, spread inside the molcajete, and let sit overnight.

  3. Rinse well the next day.

Extra Curing (if shedding continues):

  • Baking Method: Spread a paste of onion, garlic & oil, bake at 300°F for 30 min, wash.

  • Boiling Method: Boil with water, coarse salt & vinegar until evaporated, then grind uncooked rice until clean.

Final Step: Grind coarse sea salt and corn until debris-free. Rinse — ready for salsa & guacamole!
