Shrimp Empanadas

Recipe Ingredients
For the Dough:
- 1 lb Masa (corn flour) – Maseca
- Warm water (as needed)
For the Filling:
- 1 lb Fresh shrimp, peeled, deveined & chopped
- 2 cups mashed potatoes
- 1 cup mozzarella cheese, shredded
- Salt & pepper to taste
For Frying:
- Vegetable oil for frying
Instructions
- Prepare the Dough: Place the masa in a large bowl and gradually add warm water until a soft dough forms. Cover with a damp cloth and let rest while preparing the filling.
- Prepare the Filling: In a bowl, combine mashed potatoes and shredded mozzarella cheese. Add chopped shrimp, season with salt and pepper, and mix gently.
- Assemble the Empanadas: Divide dough into small balls (golf-ball size). Flatten each between plastic sheets using a tortilla press or your hands to form a circle.
- Place a spoonful of filling in the center. Fold into a half-moon shape and press edges firmly to seal. Crimp with a fork if desired.
- Fry: Heat oil over medium-high heat. Fry empanadas 2–3 minutes per side until golden brown and crispy.
- Remove with a slotted spoon and drain on paper towels.
- Serve: Enjoy warm with your favorite salsa or dipping sauce.
