Dried New Mexico chile pods

New Mexico Dried chiles originate in New Mexico and it is believed to be a descendant of a pepper that began in Mexico. They resemble the California chile, only they are more flavorful and hotter. The chile is deep redish-brown or bright scarlet in color, tapered and has a clear, earthy sweet mellow flavor, a mild and a little sagey aroma with tones of dried cherry. Dried New Mexico chiles add intensity and depth to many sauces. These chiles are the basic chile used for classic red sauces and are preferred to be used in stews, tamales and soups. Dried New Mexico chiles are used in Southern New Mexico, to make decorative ristras (strings of red chiles) and wreaths. The drying process of the Dried New Mexico chiles brings out their flavor, giving them a more distinctive taste, than the fresh ones.

To rehydrate the New Mexico Chiles wash them in warm water, remove seeds, veins and stems. Bring them to a boil in a saucepan covered with water, and let simmer for 10 minutes until their flesh is soft and plump or slightly fat. Then taste the water, and if it is bitter then just replace it with fresh water and pour into blender to puree it until smooth. Strain and you can then use it to make chili con carne, tamales, enchilada sauce, and various dishes that call for red sauce. If you roast and grind the chiles you can make your own chile powder. To keep chiles for up to six months or more,make sure to store them in an airtight container in a cool, dark and dry place. If you can't find Dried New Mexico chiles you can substitute them with California chile or Ancho chile.

Chile Seco de Nuevo Mexico es originario de Nuevo Mexico y se cree que es un decendiente de un chile que nacio en Mexico. Es muy parecido al Chile California, solo que son mas sabrosos y picosos. El chile es de un color rojizo-marron o escarlata brillante, conico y tiene un claro sabor dulce terroso, ademas de un aroma suave y con tonos de cereza seca. Los chiles secos Nuevo Mexico agregan intensidad y profundidad a muchas salsas. Estos chiles son los chiles basicos usados para las clasicas salsas rojas y son preferidos para ser utilizados en guisos, sopas, y tamales. Los chiles secos Nuevo Mexico se utilizan en el sur de Nuevo Mexico para hacer ristras decorativas (cadenas de chiles rojos) y coronas. El proceso de secado de los chiles Nuevo Mexico les saca su sabor, dandoles un sabor mad distinctivo que los frescos.

Para rehidratar los chiles Nuevo Mexico lavelos con agua caliente, retira las venas, semillas y tallos. Ponlos a hervir en una olla cubierta con agua y deja hervir por 10 minutos hasta que la piel este suave y regordeta. Prueva el agua y si esta amarga entonces solo tienes que reemplazarla con agua fresca y se vierte en la licuadora para hacer pure hasta que quede suave. Cuela y lo puedes usar para prepar chili con carne, tamales, salsa para enchiladas, y varios platillos que requieran de salsa roja. Si tuestas y mueles los chiles puedes hacer tu propio chile en polvo. Para que los chiles se mantengan frescos hasta por seis meses, asegurate de guardarlos en un recipiente hermetico en un lugar fresco, oscuro y seco. Si no encuentras chiles secos Nuevo Mexico puedes sustituirlos con Chile California o Chile Ancho.
