Poblano (from Puebla), Mole Negro Oaxaqueno (from Oaxaca), Mole Veracruzano (from Veracruz) I have had the three at the source (I'm sure there are more varieties) . They are ALL excellent examples of mexican cuisine, even though each state claims to have the best recipe ; ) To begin with each one is made with a variety of ingredients proper to the agricultural zone therefore the end result will be different.
