La panocha (trozos) de piloncillo (panela o penuche) es un ingrediente delicioso para preparar postres mexicanos, como la capirotada, los camotes y el café de olla.
PILONCILLO
El azúcar moreno sin refinar se conoce mundialmente como panela, pero su versión mexicana, el piloncillo, es muy sabroso. El piloncillo recibe su nombre por su forma cónica y se presenta en tonos marrón claro u oscuro. Su sabor es más intenso y su consistencia más firme que la del azúcar moreno. Se elabora con jugo puro de caña de azúcar, que se corta a mano, se tritura mecánicamente y luego se calienta para reducir su contenido de agua. El jarabe espeso resultante se vierte en moldes cónicos para su secado. Los puristas aprecian su pureza: no contiene melaza ni químicos.
Puedes picar el piloncillo o la panocha, rallarlo o usar un molcajete para moler la cantidad justa que necesitas de un cono, el cual debe mantenerse seco y bien envuelto.
En algunos países de Sudamérica, el piloncillo también se conoce como panela . La panela es un azúcar integral puro, natural, tradicional, sin refinar y no centrifugado. Contiene las bondades naturales de los minerales y vitaminas presentes en el jugo de caña de azúcar . La panela recibe muchos nombres, como azúcar turbinado, jaggery, gur, raspadura, piloncillo, panocha o penuche.
