Cuece la pasta de codo durante 8-10 minutos o hasta que esté al dente. Escúrrela y resérvala.
Derrite la mantequilla en una cacerola a fuego medio. Incorpora la harina y cocina durante 30 segundos, removiendo constantemente con unas varillas. (Ten cuidado de que la mezcla de harina no se queme).
Agregue la leche y continúe revolviendo durante 3 minutos hasta que la mezcla hierva y espese.
Una vez que la mezcla haya espesado, agregue poco a poco el queso rallado; revuelva suavemente hasta que se derrita. La salsa debe quedar cremosa y suave.
A la mezcla de quesos, agregue chorizo cocido desmenuzado y ½ taza de HERDEZ® .Salsa de guacamole.
Incorpore con cuidado la pasta cocida a la salsa de queso y revuelva para que se combinen uniformemente.
Transferir a una fuente apta para horno o a una sartén de hierro fundido y hornear durante 10-15 minutos.
Retirar del horno y adornar con rodajas de jalapeño y queso fresco.
