Los jalapeños, considerados entre los chiles más sabrosos del mundo, son uno de los ingredientes más representativos de la gastronomía mexicana. Existen muchos tipos de chiles, pero el más popular y utilizado en la cocina mexicana es el jalapeño. Originario de Jalapa, región del estado mexicano de Veracruz (Golf de México), la popularidad de este chile se ha extendido más allá de sus fronteras originales. El jalapeño (un chile de la familia de plantas Capsaicum) deriva su picor o ardor de la capsaicina, una sustancia química potente que sobrevive tanto a los procesos de cocción como de congelación. Los jalapeños se pueden añadir a cualquier plato para darle un toque picante. Su picor no altera el sabor de la comida, sino que realza sus matices y sabores. El jalapeño tiene forma cónica, con la punta afilada y más redondeada que puntiaguda. Mide entre 6 y 8 cm de largo y entre 3 y 5 cm de diámetro. De color verde intenso, textura suave, piel gruesa y carnosa, es aromático y tiene un agradable sabor a verdura, ligeramente picante. Las semillas y las venas retienen el picor; al retirarlas, el chile será un poco menos picante.
Since moving to Florida from California, I haven’t found tortillas strong enough for how I was taught to make enchiladas! THESE tortillas are perfect. They don’t disintegrate in the hot oil before I can get then into the enchilada sauce. They make great quesadillas,too. Since 36 are in a package, I freeze them (12 to a package) for later. Gracias!
