El maíz pozolero es un ingrediente esencial en la cocina mexicana. Se puede encontrar como guarnición o como parte integral de platillos como el menudo o el pozole. El maíz pozolero se elabora con maíz, alimento básico de los aztecas prehispánicos. El maíz se seca, se hierve y se remoja en cal hasta que esté húmedo y tierno.
