El maíz pozolero es un ingrediente esencial en la cocina mexicana. Se puede encontrar como guarnición o como parte integral de platillos como el menudo o el pozole. El maíz pozolero se elabora con maíz, alimento básico de los aztecas prehispánicos. El maíz se seca, se hierve y se remoja en cal hasta que esté húmedo y tierno. La cal permite que el maíz conserve una textura firme en lugar de quedar blando. Luego se lava bien para quitarle la cáscara y cualquier resto de cal. Since moving to Florida from California, I haven’t found tortillas strong enough for how I was taught to make enchiladas! THESE tortillas are perfect. They don’t disintegrate in the hot oil before I can get then into the enchilada sauce. They make great quesadillas,too. Since 36 are in a package, I freeze them (12 to a package) for later. Gracias!
