My Californian Family whose ancestors arrived in LA in the 1770s have been using this wonderful Chile sauce for over 80 years. Perhaps longer, but that is as far back as my memory goes. The recipe has never changed. It is perfection.

I love chili de las Palma red chili. It is so versatile. I use it for enchiladas, taco tamale pie and so many other dishes.

Since moving to Florida from California, I haven’t found tortillas strong enough for how I was taught to make enchiladas! THESE tortillas are perfect. They don’t disintegrate in the hot oil before I can get then into the enchilada sauce. They make great quesadillas,too. Since 36 are in a package, I freeze them (12 to a package) for later. Gracias!
