Cotija Cheese is a hard cow's milk cheese with a dry texture, sharp, crumbly, aged very popular in Mexico. Its cheese crumbles are used over refried beans, salads, sopes, gorditas and pambasos. Cotija (pronounced ko-TEE-hah) is like the Mexican parmesan cheese, it is also called Queso Añejo Mexicano. Cotija Cheese is white, salty and granular, also similar in flavor to Feta Cheese, it softens but does not melt when heated. Cotija, Michoacan, is a town in Mexico where the name originated.
