Ground Achiote or Annatto powder is a spice used in many Latin American dishes to give stews, chorizo and sauces their characteristic rich yellowish-orange color. The Ancient Aztecs called it Achiotl, and it was used for Mexican manuscript painting in the sixteenth century. Annatto is a plant used as a condiment because it gives food a vibrant red color and if used in small amounts Achiote doesn't have a flavor. However if Annatto is used in large amounts for flavoring, then you will get an earthy, peppery, nutmeg flavor, with a touch bitterness. This famous seasoning is often used to season chicken, fish, pork and it's also what is used to color cheeses like Cheddar, Red Leicester and Gloucester, as well as other cheese products and dairy spreads. Achiote is the main ingredient found in a famous typical pork based dish from Yucatan, Mexico called Cochinita Pibil or cochinita con achiote. Cochinita is a savory dish made by using achiote to color it, marinating the pork in strong acidic citrus juice, and roasting the pork while it's wrapped in banana leafs. Achiote is also used to make a paste named Recado Rojo, which is made with various spices and is the key flavor in carne asada, fajitas, and is usually rubbed on pork meat, fish, and poultry, as well as vegetables. When rubbing the meat with Recado Rojo the meats get wrapped in banana leafs along fresh chiles, and are pit-roasted until the meat falls off the bone.

Overall a good product but there are NO directions (or even suggestions). So, still some experimenting to do with recipes, but pretty good results the first time all things considered.
