Cascabel chilies pronounced [kahs-kah-BEL], are small, plump, round, smooth, shinny skinned chiles native to the Pacific Coast of Mexico. Cascabel which means rattle, are also known as guajones, coras, bola chili or chile bola (Spanish for ball chili) referring to its round shape. They are nicknamed rattle chiles because it refers to the sound the loose seeds make inside a dried cascabel when the chile is shaken. Cascabel Chiles are moderately hot with a nutty flavor and rich, deep reddish-brown color with an almost transparent thick skin when dried. They are grown in many states in Mexico including Durango, Jalisco, Guerrero, and Coahuila. The Cascabel chile is moderately hot, with a sweet, slightly smoky, nuttly flavor with rich tannic nuance and no extreme heat that goes great with meats, chicken or fish. Tipically the cascabels are toasted on a comal and then used in soups, sauces, salsas and stews. Cascabel Chiles are available in powdered, dried and pureed forms and Ranchero brings the very best and fine quality products to your table. You can substitute the cascabels with guajillo, ancho, pequin, tepin or cayenne pepper.

  • Toast cascabel chiles on a Skillet or comal prior to using them.
  • After toasting use cascabel chiles in stews, salsas, soups and sauces.

  • For more complex flavors pair them with other Mexican chiles.
  • Pair enchiladas, salsas, sauces, soups, stews, tacos, tamales, tomatillos and tomatoes in casseroles with the savory nutty taste of roasted cascabel chiles.
  • Rehidrate cascabel chiles for no more than 2o minutes in warm water to make them into a sauce or turn them into a paste.
  • You can add directly to any recipe that will cook for 10 minutes.
  • Remove the chiles when the desired hotness is reached, since the skin of the chiles does not dissolve quickly.
  • Once rehydrated, add cascabels to a recipe, chopped or pureed.
