Cuitlacoche (also known as Huitlacoche or Guitlacoche) is a fungus that affect corn (maize) and induces tumors that grow on the ears of the corn. The fungus is harvested and eaten as a delicacy, called Corn Smut. Goya's Cuitlacoche (Corn Mushroom) has a tasty smoky flavor that goes great with tortilla-based foods like quesadillas, crepes, tamales, for soup toppings and other dishes.
