ACHIOTE OR CONDIMENTED ANNATTO

The condiment Annatto or Achiote El Yucateco, is precisely made with annatto seeds of excellent quality, used to give color, and of course as an excellent seasoning, grown in the humid tropical weather of the Yucatan Peninsula in the southeast of Mexico. It is traditionally used as seasoning in the famous Yucatecan and Central American dishes, mainly those influenced by the MAYAN CULTURE.
It is ideal to marinate or to prepare grilled or roasted beef, chicken and the most famous Cochinita Pibil.
El Yucateco Annatto or Achiote has two displays of these excellent products: the traditional paste and the newness liquid. No coloring added.

HOW TO USE ACHIOTE

It's really easy to prepare! You can dilute 1 OZ of paste with ½ of cup of vinegar or 50 ml of liquid annatto. Ready to use! You can marinate and season 1kg of beef, pork, chicken or fish.

I like to grill beef marinated with achiote on the barbeque. Instead of diluting with a citrus juice (e.g., orange juice) or with vinegar, the thing I find works best is to use a little bit of orange juice concentrate (from a can of frozen orange juice) mixed 1:1 with vinegar. The El Yucateco brand is more finely ground than the La Perla del Mayab product and I think it tastes better too.
