6 chiles pasillas,washed, seeded and deveined6 chiles mulatos, washed, seeded and deveined1 1/2 teaspoons of salt to taste2 medium white onions, peeled, chopped and sautéed for 5 minutes in 1/3 cup of oil2 medium white onions, peeled and chopped (raw)3/4 cup beer, pulque or sparkling wine, or 1 tablespoon of tequila to taste2 tablespoons of olive oil1/2 cup finely chopped white onion
1. Grind all ingredients xcept olive oil ans 1/2 chopped onion in food processor or blender.
2. Season to taste with salt.
3. Add liquor if desired. Before serving, stir in the oil and remaining onion
This salsa is excellent with tacos, the beer adds a unique flavor and taste that makes it unique.
