They are nicknamed rattle chiles because of their shape and the sound they make when the dried chile is shaken. Cascabel Chiles are moderately hot with a nutty flavor and rich brown color. They are grown in many states in Mexico including Durango, Jalisco, Guerrero and Coahuila. The Cascabel chile has a sweet flavor that goes great with meats, chicken or fish. Tipically the cascabels are toasted on a comal and then used in soups, sauces, salsas and stews.
