4 tb. Butter 28 oz. can Las Palmas Green Enchilada Sauce 3 clove Garlic 1 Green Bell Pepper 1 lrg. Tomato 8 oz. Mushroom package (slice or whole) 1 lb. Cooked shrimp 1/2 cup Jack Cheese or Asadero Cheese 1 Jalapeno chile diced 1/8 cup Cilantro chopped 1 tb. Chicken Bouillon
In a large skillet heat 2 tbs. of butter,garlic,jalapeno chile, and saute' for about 1 minute.Pour in the Juanita's Green Enchilada sauce, chicken bouillon, and simmer 5 minutes.In separate large skillet add 2-tbs. butter, add mushroom, bell pepper, and tomato saute' for 3-4 minutes.Combine mixture to sauce, and mix well. Add shrimp,cheese, and cilantro. Cover and let set for 3 minutes and serve.
