Red Jalapenos seeded and minced (optional) 1 small bunch Spinach stems removed, thinly sliced 3 Tbsp. low calorie Italian Dressing 1 1/2 cups reduced-fat Gouda Cheese shredded
Recipe Instructions:
1. Preheat oven to 500 degrees F. Toss all ingredients (except tortillas and gouda cheese) in a large bowl and marinate for 10 minutes. 2. Warm tortillas in an un-oiled skillet until crisp. Stir one cup of cheese into vegetable filling. Divide cheese mixture among 4 tortillas. 3. Sprinkle tops with additional 1/2 cup of cheese. Place tortillas on sheet pan and bake for 10 minutes or until cheese melts. 4. Cut tortillas into 4 wedges and serve.
