Description

Author(s): Julia Fernandez

To create the first humans, the gods breathed life into two corncobs. This story reveals how vital corn was to the Mayas, as well as to the Aztecs and other native peoples. The native influence in Mexican cuisine is clearly seen in the thousands of variations on basic corn tortillas, beans, and chili peppers. The Spanish inheritance is shown in the numerous meat dishes and the inclusion of wheat and dairy products. Cuisines of the World: Mexico takes you on a journey of the rich culinary landscape, as well as introduces you to the people, festivals, and regional life of Mexico. All the original recipes are specially chosen by Julia Fernandez, a Mexico City native. Her detailed, step-by-step instructions are accompanied by lush color photos to help you achieve the best results. Cooks of all levels will want to prepare entire Mexican meals to enjoy with family and guests for all occasions.

Review for Cuisines of the World: Mexico by Julia Fernandez
January 9, 2011
This book features the best flavors of Mexican cuisine beautifully introduced. The pictures are tempting and the recipes and instructions although in Spanish, are easy to follow. The it is rare to find truly authentic recipes such as these. Many of the recipes such as "squash blossoms", "nopalitos" or "frijoles borrachos" were passed down from generations and make use of simple and natural ingredients, as do most of the recipes, as do all the recipes in this book. I treasure my copy, and don't let it out of my sight!
