CAJETA
Cajeta [KAH-HEH-TAH]is a thick, dark syrup or paste made from caramelized sugar and milk — traditionally goat's milk, although cow's milk is often used, and then it's called DULCE DE LECHE. Cajeta can be found in several flavors (primarily caramel or quemada (plain), vanilla and wine flavor). It's used in Mexico and in some South American countries primarily as a dessert by itself or as a topping for ice cream or fruit. In Argentina, Chile, Uruguay and Peru to prepare Alfajores (Caramel Sandwich Cookies). Mexican Desert.

RECETA DE CREPAS DE CAJETA
Ingredientes:
2 tazas de Cajeta Coronado 1 taza de leche Nueces picadas para decorar al gusto Para las crepas: 1 y 1/2 tazas de leche 1 barrita de mantequilla 1/2 cucharadita de polvo para hornear 1/4 de cucharadita de sal 4 huevos 1 taza de harina de trigo
Manera de preparar: Las Crepas:
1. Mezcle todos los ingredientes en la licuadora, deje reposar en refrigeración; si queda espesa, rebájela un poco con agua fría. 2. Haga las crepas poniendo un poco de la pasta en un sartén pequeño con anti adherente untando con mantequilla; extienda la pasta con movimientos circulares y deje a fuego bajo hasta que se despeguen las orillas o se empiece a dorar.Voltee en un comal untado con mantequilla y deje cocer por 2 minutos. Repita la operación hasta que se acabe la pasta. Coloque las crepas en un tortillero a que suden y se suavicen los bordes, sepárelas y déjelas enfriar. Para el relleno: 3. Ponga la Cajeta Coronado en una sartén, rebajela con la leche, dejela enfriar. 4. Unte las crepas por un lado con la Cajeta Coronado, doble en cuatro, sirva tres en cada plato y decore con nuez picada.
I haven't had cajeta in years!! Last time was in Ohio at a Walmart. But the new Walmart here in Ohio doesn't carry it!! So I ordered five bottles. Oh!! And to think I am saving this for the next time I make home-made churros Nah... I'll just eat it straight!! Unfortunately, that's how the first bottle disappeared...

This is a product I have known since I was a child living in Mexico. This is a most wonderful and flavorful product. Once you have tried it I am sure you will be hooked. Spread it on a slice of white bread and enjoy!
