I love to throw whole achiote seeds into covered baking-ware with fresh whole chicken, an assortment of vegetables and spices and let everything cook at 370 degrees for about an hour. The achiote softens and contributes flavor to the preparation and biting the whole seed is pleasantly nutty tasting and soft.
