This beef chorizo by El Mexicano is U.S. inspected and passed by the Department of Agriculture (EST.871), made in California. Please keep refrigerated or frozen upon arrival. Thaw in refrigerator or microwave. Keep raw meat separate from other foods. Wash working surfaces (including cutting boards), utensils and hands after touching raw meat. Cook thuroughly. Keep hot foods hot. Refigerate leftovers immediately or discard.
Ingredients: Beef Salivary Glands, lymph Noeds and Fat (Cheeks), Beef, Paprika, Soy Flour, Vinegar, Salt, Spices, Red Pepper, Garlic Powder, Sodium Nitrate. Serving size 2.5 oz (servings per container about 4). Calories 270 per serving (from fat 210). Total fat 23g (35% daily vaulue), saturated fat 8g, trans fat 0g. Cholesterol 65mg (22%). Vitamin A 120%.
Cooking instructions: Remove casing, add desired amount of beef chorizo to cooking pan. Then, stirr the chorizo with a low heat for a minimum of 10 minutes or until it reaches a minimum temperature of 170 F. When the chorizo is thoroughly cooked, you may wish to add eggs beans, potatoes if desired.

This chorizo is typical of the supermarket variety here in the States, unless you have a supermarket which caters a little more to the local Mexican population, in which case they make it fresh with either ground pork or beef (no organ meats or scraps). I lived in Mexico for a while and they use ground pork or beef, though pork was the more common meat in Sonora where I was living at the time. The homemade chorizo in Mexico was sublime, the only thing which comes close up here is either homemade or the Mexican grocers who make it fresh daily. Pros:

This is the second time I have ordered chorizo (a lifetime favorite) from MexGrocer. I ordered 10 for my son's high school graduation fiesta and was not charged for "quicker" shipping even though it was not requested. The chorizo arrived in a bubbled vacuum-packed bag with an ice pack within a few days. I can't buy chorizo like I grew up eating in California on the East Coast and I will continue to order it on a regular basis. It was a HUGE hit with my New England friends and tasted just like I remember.
