Queso Cotija Cheese is delicious, mild, smooth, with a little bit of a chew to it. I know people substitute Jack cheese for this, but it is simply not the same. It brings to mind the fresh "cheese curds" popular in Wisconsin. Absolutely delicious in saladsPros:

Again, it is difficult to find, and it is a chilled item, so it had to be shipped to Hawaii with "blue ice" in a cooler sack. It arrived room temperature, but still flawlessI would recommend this item to a friend.
