8 Mission® Burrito Size Flour Tortillas warmed 1/2 cup Lawry's® Caribbean Jerk Marinade with Papaya Juice 1 cup light Mayonnaise 4 Tbsps. Honey 1-1/2 tsp. Curry Powder 1/2 cup Celery diced 1/2 cup Green Onion sliced 5 cups cooked Pork shredded 1/3 cup Raisins (or dried cranberries) 1/3 cup Almond Slivers toasted 8 leaves Butter Lettuce
1. Mix marinade, mayonnaise, honey and curry powder. Fold in celery, green onions, raisins, pork and almonds. Place one lettuce leaf on each tortilla. Top with 1/2 cup of the pork mixture and roll up tortillas. Mixture may be prepared ahead and refrigerated for a time saving idea.
